Chocolate chip pancakes with syrup and powdered sugar (yeah, yeah), assorted breakfast cookies, a tuna sandwich with carrots, and dinner's gonna be homemade pineapple and mandarin orange pizza. Best thing ever. Also a couple stray chocolate bars.
Hey - new here. Trying to get back on track with healthy eating after a year of really disordered eating. So far today I've had: maple flax oatmeal and a banana, garlic wild rice with quinoa, and for dinner tonight I'm fixing on purple rice with adzuki beans, dulse flakes, and sesame seeds. Also had an orange and some pretzels for a snack, though I want to start cutting out gluten ASAP.
Hi! That all sounds really delicious! There are some GF folks around here, myself included, so if you have any questions, ask!
(For example, did you know oatmeal is a controversial subject with those who are GF, and a lot of oatmeal could be contaminated with wheat? You can get specifically GF oatmeal tho.)
I actually was aware of the oatmeal thing; it isn't a typical part of my diet, but being on a tight budget, I saw something clearance and nutrition and went for it. I do not have a gluten allergy TMK, and will probably be approaching GF more as a "significant reduction/avoid when possible" rather than a rigid absence of it. But I'm very psyched to hear that there are GF people here who can give me some pointers, and thanks so much for offering to help :)
The eating's not really going well, which is uncomfortable to admit.
I had popcorn last, but I have a stomachache which make me hesitate to eat anything else. Most likely since I've only had popcorn, the cupcake results of a family member's last cooking class, and two muffins today. Perhaps some ravioli and some nuts will make me feel better?
Yeah not eating can give you a stomach ache that makes you not want to eat, which gives you more of a stomach ache ... it's a vicious cycle.
It sounds like you've had mostly carbs today. Some nuts, which would have healthy fats and a little protein sound like a good idea in my un-medical opinion! And the ravioli sounds like a good idea too. Let us know how it goes!
I mixed the ravioli and the rest of the sunflower seeds, and found it a little salty. Mixing the seeds in the sauce muffled the saltiness a bit, but it's eaten now.
Oh, I found a gourmet snack mix! Raisins, dried cranberries, mango, dried pineapple, almonds, banana chips, and papaya are in it. It's tasty. n_n
Breakfast: Bagel w/cream cheese, juice Lunch: Lean Cuisine Spring rolls, Tomato Garden Soup Snack: Chex Mix, Fruit Popsicle Dinner: Another Lean Cuisine TV dinner (I do like these sodium laden things) Snack: Not sure yet. Just as long as I don't give in and bake something.
I got up late today after staying up half the night and ended up eating backwards. I had a huge salad for breakfast around lunch time, with lettuce, shaved carrots, and tomatoes. And then I had two bowls of cereal for dinner.
I woke up a little late for breakfast, so had an early lunch of iced coffee and lentil salad in a pita. Then I was hungry again and had a late lunch of more lentil salad in another pita with some iced chai. For dinner I had stirfry with red rice, tofu, cabbage, kale, and bok choy. It tasted better than that sounds, trust me.
Out of curiosity, what are the ingredients to lentil salad? I'm looking for something I could take to work with me for lunch and the sound of "lentil-something in a pita" is amazing.
Sadly, this lentil salad didn't turn out excellent. But basically, to make a lentil salad, you just cook the lentils, add vegetables, and then dress it and let it marinade. Any vegetables, any dressing, I'd imagine.
The salad I made had a sweet onion, a cucumber, a yellow and a red bell pepper (roasted), and red lentils. All the vegetables were chopped and then added to the lentils, and then I made a dressing which was basically lemon juice, olive oil, garlic, cumin, salt, and pepper. Then it sat in the fridge for four hours, and then voila, lentil salad.
The recipe wasn't very good, though, and the whole thing turned out kind of bland, despite having an entire onion involved. I think it might have needed more lentils, less onion, and a stronger dressing? So if you try this, keep that in mind.
