veggies for breakfast
Aug. 27th, 2011 12:21 pmI have a lot of trouble eating enough veggies, so I try to squeeze them in where I can. One of the places where there's traditionally no veggies (at least they way I eat it) is breakfast. This morning though, inspired by
alexseanchai, I made scrambled eggs and veggies, and lo, it was good!
A very rough recipe (more general guidelines than anything):
oil of your choice
2 eggs per person
couple splashs of milk/milk replacer of your choice
no more than 1 cup of veggies per every 2 eggs. Ideas:
-canned veggies: corn, green beans, olives, diced tomatoes. Just make sure they are thoroughly drained, you don't want your eggs to get watery
-frozen veggies: corn, those diced veggie mixes, basically anything you have in your freezer that you think will go with eggs
-fresh! I did cauliflower, zucchini and sweet bell pepper and it was good.
if you're a carnivore, you can add bacon or sausage
if you eat dairy, you can add shredded cheese, or a cheese replacer of your choice. The dish is good on its own without meat or cheese though.
For fresh veggies: dice and cook them in the oil. Canned: drain thoroughly and heat them through. Frozen: heat up! Cook the meat if you're going to add meat. Mix the eggs with a couple splashes of milk (maybe 1 Tblsp per egg, if you need measurements) and then scramble them in the oil with the veggies (and meat). Add the cheese when the eggs are almost done, if you're going to add cheese. Serve hot and enjoy!
variations:
-Italian-ish: cook with olive oil. Start out sauteing some garlic in the oil before you cook anything else. When you add the eggs, add some Italian seasoning. Use tomatoes. If you have it, some fresh basil added at the very end might be good.
-Tex-mex-ish: cook with a neutral oil like canola, use bell peppers, and if you're adding cheese, add a spicy cheese like pepper jack. When you're done, top with your choice of taco toppings, such as salsa, sour cream, or avocado/guacamole.

Date: 2011-08-27 06:03 pm (UTC)I don't like them canned, so I just grab a handful of fresh ones, clean them, slice them, throw them in a pan, and add the eggs when they start to brown. Heavenly.
(I know mushrooms don't botanically count as a veg. But they're very healthy, so I count them anyway. *g*)
