I have a lot of trouble eating enough veggies, so I try to squeeze them in where I can. One of the places where there's traditionally no veggies (at least they way I eat it) is breakfast. This morning though, inspired by [personal profile] alexseanchai, I made scrambled eggs and veggies, and lo, it was good!

A very rough recipe (more general guidelines than anything):

oil of your choice
2 eggs per person
couple splashs of milk/milk replacer of your choice
no more than 1 cup of veggies per every 2 eggs. Ideas:
-canned veggies: corn, green beans, olives, diced tomatoes. Just make sure they are thoroughly drained, you don't want your eggs to get watery
-frozen veggies: corn, those diced veggie mixes, basically anything you have in your freezer that you think will go with eggs
-fresh! I did cauliflower, zucchini and sweet bell pepper and it was good.
if you're a carnivore, you can add bacon or sausage
if you eat dairy, you can add shredded cheese, or a cheese replacer of your choice. The dish is good on its own without meat or cheese though.

For fresh veggies: dice and cook them in the oil. Canned: drain thoroughly and heat them through. Frozen: heat up! Cook the meat if you're going to add meat. Mix the eggs with a couple splashes of milk (maybe 1 Tblsp per egg, if you need measurements) and then scramble them in the oil with the veggies (and meat). Add the cheese when the eggs are almost done, if you're going to add cheese. Serve hot and enjoy!

variations:
-Italian-ish: cook with olive oil. Start out sauteing some garlic in the oil before you cook anything else. When you add the eggs, add some Italian seasoning. Use tomatoes. If you have it, some fresh basil added at the very end might be good.
-Tex-mex-ish: cook with a neutral oil like canola, use bell peppers, and if you're adding cheese, add a spicy cheese like pepper jack. When you're done, top with your choice of taco toppings, such as salsa, sour cream, or avocado/guacamole.

Mushrooms! Scrambled eggs are awesome with mushrooms!

I don't like them canned, so I just grab a handful of fresh ones, clean them, slice them, throw them in a pan, and add the eggs when they start to brown. Heavenly.

(I know mushrooms don't botanically count as a veg. But they're very healthy, so I count them anyway. *g*)

I usually scramble my eggs with onions and peppers, which is pretty good... Especially in a tortilla with cheese and maybe some tomato and avocado, if you've got it. Kind of like your Tex Mex recipe. Ooh, and you can add in cooked potato too, if you happen to have some. Which doesn't count as more vegetables, but does turn the whole thing into a much more filling meal.

Something fun I do, to include veg in breakfast, is to cut a bell pepper into rings, about an inch thick, fry them, and put eggs in them - so the egg is fried, contained in a pepper ring. Sometimes I fry some tomatoes too - makes it colourful, if you've used a green bell pepper, and you have some red tomatoes on the side.

The mushrooms sound great too, and I have at times used the fake bacon bits or textured vegetable protein, to give it more protein plus a different taste. I'm a longtime vegetarian, so no mat for me, but I think the range of options is still pretty vast--maybe even something like cream cheese in there. Pretty much my only criterion other than vegetarian is to cook it all enough that the texture is enjoyable to me, and that it be good with buttered toast! I often don't bother with much oil in the eggs themselves, and use coconut oil or butter on the toast instead--
