Fry sausage or bacon. Fry chopped potatoes in the meat grease. (Or omit the meat grease and use olive or canola oil, which is healthier.) Add shredded cheddar and two eggs per potato; stir until eggs are all cooked. Wrap up in a whole-grain tortilla. Surprisingly good.

I will have to suggest the bell peppers. Enough of the family likes them. (The rest of the family regards them as poison.) Salsa would be good too. Avocado is yecht, though, except to Mom, who likes guacamole.

To that described above I add a calzone (pizza dough, mozzarella, ricotta, tomato puree) and a rice–cheddar–salad dressing concoction with marinated cucumber on the side. No idea what's in the cucumber stuff other than cucumber, onion, and vinegar. Also a packet of M&Ms.

Ooh, peppermint tea!

Do you have fruit you can snack on during the day? That and baby carrots are one of my tricks for eating more veggies, though I get tired of the carrots pretty quickly.

I get that. I don't slice fruit either for the same reason - that's one reason I like the bags of baby carrots.

Honey bunches of oats cereal for breakfast, and I made a basic homemade mac and cheese. Elbow macaroni, butter, grated cheese, milk, eggs, and frozen peas - that's how I get my vegetables in. It's not the best I've ever made but it'll keep for a few days. I also made a bunch more pasta in case the power goes out.

I'm pseudo-veggie in that I'll eat meat at other people's houses. It's part a budget thing part a force myself to eat more veggies thing.

Oven baked is the best way, and I really like your suggestion of tomatoes and olives.

I've kind of gotten off track with eating--and this community--recently, but today was okay: banana and blueberry bagel for breakfast, banana and almond butter & strawberry preserve sandwich* for lunch, and raw carrots and a sandwich with shrimp and avocado and many other tasty things in it. I may eat a little ice cream later?

*This is my grownup PB&J. It's comfort food. *g*
