It also seems like it would be good with some avocado and salsa added after it's cooked for a bit of southwestern flavor (if you like avocado, that is, I know not everyone does) :)
ETA: haha and now I've gone and made myself really hungry thinking about it, which is a Good Thing. Thank you for the inspiration to cook! :)
