My food week in review
Aug. 20th, 2011 11:59 amSo since managing the check in post hasn't been happening, I'm going to put up a (rough) sketch of what I've been cooking for the family/what the family's been eating when I haven't cooked:
This week, we had several meals cooked by yours truly.
There was "what is in the fridge" soup:
*Chicken, diced
*2 orange peppers
*garlic
*dried onion
*White wine
*Low sodium chicken stock
*Cabbage
*Black pepper
*Tiny amount Creole seasoning
Throw it on at low to medium heat and you have soup. (Mine was done in 20 minutes, but we also have a Souperpot which--well, things get done quickly.)
There was vegetarian chili:
*Sweet potato
*2 cans black beans
*1 can kidney beans
*Garlic
*Dried onion
*Chili powder
*Black pepper
*Water
*Diced fire roasted tomatoes
*Tiny can tomato sauce
*Cumin
*Sugar/splenda to taste
In theory, you also have an onion--not our dried onion, but actual one--in this recipe. (We have one with an onion allergy in the family. Dried's as much as he can handle.)
So you put oil on bottom of pan, saute the onion and sweet potato, then you add water and the spices. Bring that to a boil, turn it down and simmer until the sweet potato's pretty close to done. Then add the tomatoes, sauce, and beans; taste it after about 5 minutes, add spices and sweetner to taste. Should take about 45 minutes, all told.
Beef Stroganoff: I am pretty certain this is actually a family recipe. So. It's kinda off limits for posting.
Egg sandwiches. Not all that healthy, but really good. Eggs, ham, cheese, and for those who were not me, mayo.
Eggs, scrambled, microwaved, added to vegetables.
Cereal, primarily rice chex.
Leftovers.
If anyone is interested, I can post this week's menu later. (After I make chicken korma for dinner. And remember to eat lunch since it's only 12:20 here.)
My hope is that if we keep cooking to a menu, the evenings where one of us is exhausted and we end up grabbing eggs will be minimized. (Admittedly, we've already seen that effect. But still. Less, "...screw it, eggs" would be nice.)
P.S. Oh! And we made zucchini chocolate chip muffins. The recipe for that one was more or less this: http://www.elanaspantry.com/zucchini-chocolate-chip-muffins/
(Verdict: Good, but we could have all lived with it being either a little sweeter or removing the chocolate and making it more savory.)
