Intro post... and a food recommendation!

Hello, everyone! I'm new here. I'm interested in healthy eating, so this seemed like a good community to join. :)
A little about my eating habits: I don't count calories and I don't diet to lose weight, but I do have gall bladder problems which require me to limit the amount of fat in my diet. I cheat on this more than I should, resulting in horrible pain that keeps me up all night cursing my poor food choices, but for the most part I really do try to stick to a low-fat diet. Unfortunately, fat is delicious, and it makes me very sad to limit certain foods like, oh say, cheese.
Sure, they make fat free cheese, but it usually tastes like plastic. There are vegan alternatives, but "vegan" is not synonymous with "low fat", so I haven't been paying much attention to vegan foods. However, yesterday I saw a jar of vegan queso with the words "fat free" on the label. Although I was prepared for it to be horrible, I went ahead and gave it a try. OH MY GOD THIS STUFF IS ACTUALLY GOOD. I can eat as much of it as I want and not worry about suffering for it later because there's no fat! Also, no cholesterol! And did I mention it's all natural? No, they are not paying me to say this, it's just so awesome I have to tell other people about it. I am so happy to have found this stuff! I'm looking forward to mixing it with (low-fat, vegetarian) chili and making enchiladas with it, too. If anyone has recipes that involve queso, please share!

Unfortunately, there is no way in gods' green earth the stores up here carry it.
At least I'm good at figuring out ways to get things.
