How has your dining been coming along lately? Anything splendiferous in your belly today?

To be honest, I've "not had time" again for a resultant headache - I had lunch!! A little while ago... um...
Time to check the fridge...

This may not be intriguing to the world, but it has made *my* life easier and more yummy. I used to keep the worlds of 'melted cheese on toast/grilled cheese' and 'veggie burgers' separate, and the veggie burgers got more tedious and I ate them less although wanting the protein, since they were pain to cook and a mess to eat--take my word on that. I finally figured out that if I make several open-faced cheese on toasts at once in the toaster oven, and I maybe toast or heat the bread a little, put mayonnaise and sliced tomatoes on it, and then heat up some veggie burgers separately so they aren't frozen or uncooked, and then stick one each on the no-cheese-yet things and heat them, and then put on a bunch of cheese and melt it, that can result in several easy meals right there with a bunch of protein in, plus they're yummy. They reheat perfectly well, or taste fine coldish, and they aren't as messy to eat for me as burgers with stuff sliding out. I really hate messy food, and really love easy to eat food.

I .. skipped breakfast. But I did have an applesause cup at work even though it was woefully inadequate.
Good lunch though of leftover mac and cheese plus a nectarine.
Chips for snack when I got home.
...And dinner is falling by the wayside. Seeing this post is reminding me that I Must Not Skip Dinner. Oy.

My husband surprised me the other night with a tasty vegan pizza - the crust was nan, with tomato sauce, vegan mozzarella, sliced tomato, and basil. It was delicious and pretty simple to make!
