Welcome to the weekly recipes post! The idea is to give folks who want to try new recipes ideas. Each week we'll have a theme chosen from the themes list on this post. If you would like to suggest a theme, comment there and I'll add it to the top of the list.

Since I'm a little late this weekend, let's talk omelets. Just in time for Sunday brunch!

I made my first omelet when I was 15 with no supervision. I used as my model too many fancy cooking shows where they flip the omelet over in air. I don't recommend doing that. The good news about omelets is that if you mess up folding it over, you still have delicious scrambled eggs.

Ingredients
Eggs - number depends on how big your pan is and how hungry you are, but one serving is usually 2 eggs

The basic omelet starts with eggs beaten together in a bowl. You can do just egg whites. You can add a little water or milk so they don't cook quite so fast. You can go ahead and add salt and pepper. Beat them with a fork - according to my Good HouseKeeping cookbook, over-beating the eggs makes the proteins in the whites tougher.

So the 999 things you can add to an omelet. I'm going to need your help here because I usually just add grated cheese - cheddar or whatever I have on hand, though I like cheddar best - and maybe onions and mushrooms that I cook separately or before I do the eggs. At restaurants I love getting stacked omelets so I know there's a bunch of possibilities. I guess the next question I have for folks is what combinations do you love?
