The workload is daunting if I look at the total for too long.

Ham and cheese with a side of carrots and tiny tomatoes for lunch.
And mulligan sauce on rice for dinner. Basicaly I grabbed the half an onion, the leftover halapeno from last week, a can of beans, a can of diced tomatoes, garlic, and mango nectar together and served on rice cooked in the last of the vegetable broth with vanilla yogurt on top.
It turned out surprisingly well.
